Summer squash (I mixed squash and zucchini), chopped into 1 – 1 1/2 inch pieces

1/4 cup

finely chopped red onion

thinly sliced prosciutto

4 oz

smoked gouda, chopped into 1-inch pieces

1/2 tsp

salt

1/2 tsp

ground black pepper

4 tbsp

white balsamic vinegar

1 1/2 tbsp

extra virgin olive oil

Dijon mustard
