INGREDIENTS

Oatmeal Mixture:

1 1/4 cups

rolled oats

1/2 cup

just-under-boiling water

Wet:

1/2 cup

butter (1 stick)

1 cup

sugar (any variety)

1 tsp

vanilla extract

1/2 cup

apple sauce

1 tsp

apple cider vinegar

Dry:

1 tsp

cinnamon (Optional: add in 1/8 tsp nutmeg for another layer of spice)

1 tsp

baking powder

1/8 tsp

baking soda

1 cup

almond flour

1 tbsp

tapioca flour (optional - sub with flour if needed)

3/4 cup

all purpose flour

Fold in:

1 cup

vegan chocolate chips or chunks

1/2 cup

raw walnuts

1/4 tsp

orange zest (optional for a citrus accent)
