Cauliflower Alfredo Zoodles with Asparagus & Spring Vegetables

Roasted Garlic Cauliflower Alfredo Sauce

cauliflower florets (1 large cauliflower head)

1/2 cup

reserved cooking water from cooking the cauliflower

1/4 cup

nutritional yeast (optional but recommended*)

1 tsp

fresh key lime or lime juice

1 tsp

smoked paprika

1/8 tsp

cayenne pepper (optional)

Salt and black pepper (to taste)

Zucchini Noodles

medium zucchini (spiralized into noodles)

2 cloves

garlic (minced)

bunch asparagus (trimmed and cut into 3/4" pieces)

1 cup

a mix of broccoli florets (Brussels sprouts, red pepper, shredded carrots and cherry tomatoes)

Chopped fresh parsley

1 tsp

nutritional yeast for sprinkling (optional)
