Filet Mignon with Gorgonzola Butter

INGREDIENTS

For the herb butter:

1 stick

salted butter, from temperature

2 oz

Gorgonzola cheese, crumbled

2 tbsp

chopped fresh herbs (I used parsley and chives)

1 tsp

freshly ground black pepper

For the steak marinade:

4 tbsp

olive oil

2 tsp

Worcestershire sauce

1 tbsp

freshly ground black pepper

For the steaks:

filet mignon steaks, trimmed and tied with butcher's twine to form a circle

Kosher salt,
