chopped fresh cilantro or parsley

garlic powder

kosher salt

large sweet red bell peppers, washed

1 cup

fat free chicken broth

1/4 cup

tomato sauce

1 1/2 cups

cooked brown rice

Olive oil spray

6 tbsps

part skim shredded cheddar cheese*


NOTES

  • Made into a casserole Sliced bell pepper into cubes. Boiled before. Added a little of sour cream to the mixture. Only need one bell pepper. Possibly add corn or black beans. Per mike.
