INGREDIENTS
1 cup
Butter, cold, cut into cubes
2 cups
Sugar

Eggs
1 tsp
Pure Vanilla Extract
1 1/2 tbsp
Fresh Lemon Juice
1 tbsp
Lemon Zest (may put more lemon zest for extra flavor)
3 cups
Flour
1 1/4 tsp
Baking Powder
1/4 tsp
Baking Soda
1/2 tsp
Salt
*may put in a drop of yellow food coloring for color
Soft and slightly chewy. Very light lemon flavor. I might add a bit more lemon juice next time but all in these are the perfect summer cookie!
We liked these--they are very lemony! We served them warm with a berry ice cream, which was a good complement.
